A counter-question that is in a world we can see: Does roasting a popcorn kernel disrupt its structure? Extending the logical argument; each cell contains moisture and when heated the moisture expands 1700 times and will blow a hole in the cell membrane.

interesting question. Of course popping corn really does look like it changes the internal structure of the corn.
