I would get the hang of it, trial and error. I shoot moving images now, so I guess a horse or a cow is no different. Or is it?

I thought about that for a second Jules and it may be better and easier to focus because of how large the animals are. I would love to try.

True they are very large animals. Good point. Shouldn't you be out photographing parks or something. lol

Excellent series !!! Love them all, but that last one ... is a favorite for me. The expressions of the two spectators on the right really adds to the scene, IMO.
