So here is my first draft of a guide that might help those starting out with panoramas.
Apologise for the length of the doc - it attempts to cover both hand held and tripod/pano head techniques - take as little or as much in as you want from it - you can skip the gear setup section if its not of interest.
I have included in the guide a simple way of making a movie of a panorama using iMovie so as to attempt to display your panorama as you would naturally turn your head to take in the full view - I will attach to this post an example of such a movie file cropped to meet the 20MB limit

Have been doing panoramas spareingly for some time. Found your guide quite useful - thank you. Have saved it for continued reference.
PTGui - is what I use to stitch. It also can do 360-180 pano, little worlds and 6 sided cubes. Has a quite active forum for help in Google.
Nodal Ninja offer pano heads for just about any pano you may wish to stitch.
