In early June we will be going to Southern UT, Northern AZ for a photo trip. We will base in Kanab and take day trips from there. I know the obvious spots of the national parks, but would rather stick to the places less traveled. Another restriction is that I don't hike well at 76, so pretty much have to shoot from pulling off to the side of the road, overlooks, and easy hikes under 1-2 miles. Any ideas would be greatly appreciated.
Cedar Breaks Utah State Park is worth a look.
Cedar Breaks, Coral Pink Sand Dunes S.P., Kodachrome Basin S.P., St. George; get an Arizona Strip Visitors Map & just go exploring; that should give you some ideas.
Quick drive south to Fredonia, then turn right (west) and head on over to Pipe Springs Nat'l Monument. Its interesting in its own right, but don't just stop there; continue north a mile or three past the park (passenger car is fine) for the expanse of the views, especially looking eastward, and as early in the day as you can manage. Half an hour's drive west, there's Colorado City. I wouldn't call it classically scenic, but it is a strange little world all of its own. If you want grandeur, and don't mind the time/drive on the dirt road, Parashant! There are zillions of amazing places along the Arizona Strip, but unfortunately, the best of those require hiking.
<Edit: It will be HOT! Not July hot, but HOT all the same. GO NOWHERE unless you have 3x more water than you ever thought you'd need.>

Definitely go to Colorado City.
Dreamland Safari Tours will drive you to a beautiful slot canyon on their Mystical Slot Canyon Tour. You can combine this with their White Wave Tour as well as other sites. We had a very good experience with their tour service.
My wife and I were in Utah a few years ago. We saw Zion and Bryce Canyon and were on our way to see the North Rim of the Grand Canyon and decided to spend the night in Kanab. We were both very happy that we did and thought that we should have used Kanab as our base camp. Definitely stop in to the Visitor Center, we spent at least an hour and a half talking with the two ladies there and they gave us a wealth of knowledge. We got an 8.5 x 14 sheet with the names of movies and TV shows that were shot in and around the town, They also referred us to Windows of the West Hummer Tours. Ken Church was our driver and he took us to places that we never would have seen by ourselves. He started out by telling us that the tour would be about 2 hours long and that it would be $99 each, and then he told us that we would pay at the end of the tour ONLY if we enjoyed it. A friend went to White Pocket, but I think this would be too much walking for me.

Toroweap is worth a visit. But mind the LONG drive down the dirt road. It's smooth, but everything in your car will be covered with red dust - including you!
Art, We too are careful about extended hiking, and we were 84 when we toured the Western National Parks. Most of the trails gave on the distance and this was very helpful, as if over a mile we had to pass. Too, carry a good walking stick or us your monopod. Kanab is a great center to work from. Here is a link to our travel logs and they are logs on each park; they might give you some ideas on planning.
