Leaving in 10 days. I’m taking an Oly EM1ii with just the 12-100, a Sony Rx100vi as a back-up and in case I need to reach out a little more, and an Oly TG 5 for snorkeling.
Two questions: First, we will be in Quito as a small group on a guided tour the day before. Should I use the Sony only to be less obtrusive, and two, is there any reason to have different lenses?

We are leaving in five days and doing the same thing in Quitto. I will have my Canon 6D and 24-105, I have been there before and it is safe as long as you are with the group. I am taking my Canon 7D Mkii and 100-400 for land and 17-40 for the 6D to do landscapes as well as the 24-105. I also have a FinePix 120 for underwater. Good luck and enjoy the adventure. Gary

Outside in the sun I used tho Olympus tough more than expected And pix were great Also had a canon 50 with long lens and Panasonic for back up but tough won most days!

One of the problems with being in my 80s is that my bucket list has a problem. When I take something out, it leaves a void, and something else seems to fill the void. Therefore my list never really gets any shorter.
Your hate is a good type of hate. It should be the only type.

We found Quito to be a safe and pleasant city. As for the lens issue, I rented a Panasonic Leica 100-400mm
Lens from Lensrentals.com. It almost never left my Olympus camera body and was well worth every cent. I wound up buying one. The animals are close and unafraid but the extra length is very useful.

The Oly Tough camera is useful if you are a strong swimmer. You can get great shots but it’s certainly not like snorkeling in the Caribbean.

I visit Quito several times a year. My normal lens is a 28-135. The Red Bus city tour is really great. Watch your back in the colonial area, but if you're in a group, don't get paranoid. Walking that area at night with the buildings lit up is really fun! Also there's a botanical garden at the north end of the route.

I used the same lens at the Galapagos. I carried my 28-300 and did use it one day to advantage.

I assume that you will be on ship. Make sure to not store your camera in your air conditioned room. If you do, it will fog up on the inside and will take a while to clear when you go outside. If it happens, try exposing the lens to the warm sun. Have fun

I toured Quito with an 18-300 lens and it worked great. Make sure to hit the Old Town (Plaza Grande is great), ride up the Teleferico, and go up into the towers of the Volto Basilica for some great views. Be courteous when taking pictures of people. I did have one women, very nicely dressed in local attire, ask that I not take her picture.

You'll be okay in Quito. When I went we decided not to go to Quito and instead stay in Guayaquil at sea level. It's not as pretty as Quito, but it's closer to the airport that you'll have to fly to from Quito anyway. You might want a longer lens than the one you have on the EM1. I brought a 300mm lens, 70-200, 24-70 and a 16-35. My cameras were full frame bodies so the focal length is a little different than I'd take with your rigs. As for snorkeling, I took a GoPro camera as most of the time you'll be taking video since snapping a pic under water is difficult because most underwater cameras suffer from shutter lag. Video is really cool and the snorkeling is just as much fun as going on the walks on each of the islands. I wore a wetsuit that I took with me along with fins, snorkel and mask. Make sure you rent a weight belt if you are going to wear a wetsuit. You want to have neutral buoyancy or you'll have a hard time staying down 10 feet to get your video.

I did not bring back my snorkeling equipment; I sold it to the crew for about 1/2 what I paid so that I wouldn't have to lug it home. But I took it there so that I knew it would fit me ok.

Been there in 2013 with a subset of my stuff. If you're staying on a boat and doing day trips, which is typical, you don't want too much weight or anything "precious". A telephoto around 200mm would be very nice, but I would also say take a macro lens because most of the animals let you get up close with no fear. I have some awesome crab and iguana images, they sit perfectly still even few inches away. Your wide angle shots will probably come out great with a smartphone because of all the light.
It's generally very bright there, no need for any super-fast lenses.
I also had a Nikon underwater camera which was generally disappointing. Image quality sucks, I only shot a few videos.

Beware of the altitude (over 9,000 ft) in Quito, altitude sickness symptoms are something to be aware of. Kinda knocked my socks off for a few days. Try to get to the equator museum in Quito it was pretty cool. Galapagos was awesome, be careful of your gear on the zodiac could get sprayed . Enjoy your trip and bring back some awesome images to show us.

I am also heading to Galapagos in 5 days (for the second time); I am taking a Nikon D810 and 7200 w/24-120, 100-400 and 20mm. I found that this covered everything except for birds that were farther away. Quito old town is safe with a group (exercise general caution as you would anywhere you go). BTW, a dry bag is a good idea to keep your gear dry when in the zodiac. Have a great time!

My partner and I used 18-300 travel lenses. Great for touring Equador and Quito and for wildlife on the Galapagos. Mostly, the wildlife is so close that you do not need a longer zoom than 300 and the lower end of the zoom works for landscapes without having to change lenses.

This is exactly why I decided to not go to Quito, but to go to Guayaquil instead. Guayaquil is at sea level and the airport to the Galapagos is there too.
