The kayak is a great method as it gets you at eye level - it "may" have also added some movement and softness. But if you have access take the kayak as you get perspective missing in shore shots. Spoonbills are tough to get hard reflections as they are constantly slashing the water surface. They do pop the colors which is why they are searched for.
