I love taking pictures of cardinals and I just bought this camera so I can take close ups but I notice they are not as sharp as I want them. What am I doing wrong. I have it set on bird watching.

I’m guessing th AF is locking on the square support pole.
I would also select the lowest ISO setting as a starting point as this will reduce the noose from a higher ISO.
Be sure the focus point is the bird, ideally the birds head.

I put the dial to scene and set it to bird watching. I just got this camera so I am still playing around with it and learning

You need the window open if you want a sharp image.
Your last one looks best.
I’m not familiar with your camera so can’t advise specifics. But you do need to ensure the focus is on the eye and you are getting a shutter speed at least 1/500. If your camera has a high speed multiple image setting and use it to take at least five images and pick the best. And work to hold the camera steady and lightly touch release.
