Tasty Lentils & Beef Tripe w/heavy cut Carrots and a glass of White Wine!

The past few days has been quite cold. Time for a nice hot bowl of soup, or on the heavy side, a healthy fine bowl of Lentin Stew! In my 8qt Kuhn pressure cooker with 2 cups of spring water (16oz) I unrolled beef tripe and cut it in half then 1/4 cut it again.

Into the pot it goes with one stick of Cinnamon. A sprinkle of coarse black pepper two smashed cloves of garlic and 16oz of spring water starts to a boil lock the cover tight cook on high 40 min. Remove pot from burner to side burner releasing pressure steam.

After removing cover, place Tripe in dish to cool. Use remaining water in pot and cut five pealed thick carrots into chunks and add to pot with 28oz can of Pastene Puree and one 16oz bag of Lentils and mix well. When mixing well in simmering water, add five cloves of chopped garlic and two bay leaves!

After plating I sprinkled a dash of Oregano to add an attraction, very tasty! CIAO, AP

And you are in Massachusetts?? Sounds like one of our Cajun or Creole recipe! I'd love to be able to sit down with a bowl full of that stew or rich soup. It would hurt my stomach from overeating!! I suppose that some kind of bean (field peas, navy beans, butter beans, red beans, etc.) could be used in substitute of lentals. Pressure cooked food can be real good and tender -- and the spices would be well engrained in the dish. Thanks for that recipe- could be Italian or Portuguese - huh, Mr. AP?

You hit two of my favorites with tripe and lentils both in this recipe, AP. My mother made lentil soup in the winter as you suggest. It was healthy, hearty and delicious. She also made tripe in a tomato sauce we always had with macaroni. I like your idea of combining tripe with your lentil soup to make a super meal. Loaded with enough protein, vitamins and minerals to carry you through this cold New England weather.

if I ate that I would be in the smallest room for 24 hours.....Maybe even hospital............lentils are lethal.

Pressure cookers are a wonderful addition to any kitchen. A hint for letting them cool quickly- Run thgem under cold running water. They cool very quickly. Don't use this with the electric cookers. I will have to try ypour reciepe. (without the tripe--hate it) Will use beef cubes.

Welcome, Ballsafire! Creative cooking would be a good start to name this recipe! To be creative in your cooking, is a very start cooking anything. A lot of people do not like eating Tripe. The Portuguese cook Tripe the best, a stew! I'm half Greek, I do not like the Greek recipe of Tripe with lemon. Although, I learnt quite a bit of cooking when I was a boy from my Grandmother Mary Kastanopolous, from Kalamata, Greece.

This dish was very tasty with flavor. If you eat one bowl, you'll come back for seconds! CIAO, AP

John, always good to hear from you, and welcome! Lentils are very tasty and are high in vitamins with amino acid, very good for ones brain. Boy, you can be so creative cooking with beans! Side dish, cold or heated from the can. Add chopped scallions and garlic. Cook chopped sausage with onions and a clove or two of chopped garlic, add to Boston Baked Beans. You can just go on and on! Love your stories, John! The're very good . . ! AP

I see your not a creative person! Lentils contain the highest amount of protein you can get in those little beans! Also, a high amount of amino acid, for your braine, (braine-food) I have learnt from you that you are not aware of the English words and their correct meaning!

I guess as you mentioned, you eat your dinners in the smallest room of your house, the closet! Try eating at a table with your family, well lit. You might find a pleasant conversation full with laughter! Bendover backwards, think of Happy Thoughts! Don't be so boring when you speak, and use the correct words!

Lentils may be the best food you ever ate, given you the most energy you never had! AP

Boberic, Welcome! I have to agree you, Pressure Cookers are wonder! But, when you start, buy a one! Make sure they will work on a induction stove, stainless steel bottom pot! I have 7 Kuhn (top-shelf), 3 Fabra Where, 2 Fissler Ware (top-shelf) just bought.

If you cook food that takes a long time time to cook when it's done, then a pressure cooker is what you need! Please try this wonderful tasty and flavorful recipe! AP
