I was thinking of going to shoot at Saint Patrick's Cathedral.
I have never been there.
How much time can you spend there?

Since I have not been there I don't want to make the trip if I can't spend sometime there.

You can spend as much time as you want. No photos during services, no flash, no tripods. How much time you need will be determined by you. There are other noteworthy large churches in the area - my favorites are Cathedral of St John the Divine near Columbia University on Amsterdam Ave, Trinity Church at Wall St and Broadway, and ST Bartholomew's Church, Park Ave and 50th St. Riverside Church at Riverside Drive at 120th St and Riverside Drive and and the Cathedral Basilica of the Sacred Heart at 89 Ridge St. in nearby Newark NJ (5th Largest in the US). If you are into church architecture - these are fine examples including Byzantine, Gothic, Romanesque, and other styles -

It's a big place, so it depends how much you want to see and in how much detail.
Just Pray about it! How much time does God want to spend!
If you like to document the stained glass, icons, and altars it will take a while--I'd allow at least an hour or 2. Of course, you'll have to decide just how much time you want to devote to the process. Not being allowed to use a tripod will cut down the time you might use for setup, but unless you have lenses with wide apertures you'll want to learn techniques for stabilizing the camera without one. (Use columns, pew backs, anything solid you can find.)
I wonder if you are allowed a bean bag mount, something you could put on the side or back of a pew etc.
You can stay as long as you want, but there are crowds that will get in the way of photos, and you cannot take photographs during the services.

I would take my 10-20 mm on my cropped sensor camera. The amount of time you spend is up to you. I would give myself an hour minimum and give my wife the credit card and send her shopping just in case I want to stay longer.
