Areas around Cave Creek has some interesting boulder formations. Just North of North Scottsdale.
Seven Springs area where you may see and photograph all or part of the herd of wild horses.
Areas around Lake Mary may get you shots of elk and deer.
If you leave early, you can do them all in a day.

Superstition Mountains and the Apache Trail to Roosevelt Lake.
Mingus Mtn on Hwy 89A from Prescott to Cottonwood.
Prescott, Jerome, Clarkdale and Cottonwood all have scenic views and interesting buildings and Indian Ruins near Cottonwood.
Copper Museum in Clarkdale.
Montezuma Well and Castle.
West Fork.
Casa Grande Ruins.
Pueblo Grande in Phoenix.
Arizona Biltmore in Scottsdale.
Taliesin West.
Mesa Temple (Historic Site)
Heritage Square in Phoenix with Victorian Buildings.
Papago Park and the Phoenix Zoo next door. Park is wonderful for landscape and the Zoo is like a game preserve in many places.
Boyce Thompson Arboretum, plants, wildlife and old buildings.
South Mountain Park, largest city park in USA.
Road to Payson.
Most all of these are day trips. So much more but this will keep you very busy.

When my family would visit back east, we would mostly take I40. However, through the desert we would cut up 89A through the mountains to Scottsdale, Jerome and Sedona. Many sites along that route and cooler than I40 as it kept out of the low desert in Phoenix.

Just remember there is no 89A near Scottsdale. It is in northern AZ.

GREAT answer. Very thoughtful of you to go to the trouble to detail everything!!!

Architect1776 gave you excellent advice. If you can drive over to Gilbert, there is the impressive Water Ranch and Zanjero Park. Last I knew, the W. Burrowing Owls were still at Zanjero Park.

I lived in Gilbert not far from it. Totally forgot.
I designed the Boys and Girls Club building there in Gilbert.
