Nice pictures. I switched to back button focusing and I was not happy. I am going back to shutter button focusing. I am glad you got things sorted out

canon 70-200 is 2.8 is an amazing lens Shutter set at 2.8 Aperture Priority should give you a good shot, You may have to adjust the iso and experiment

In sports photography a little motion blur (hands-Feet etc.) conveys a feeling of action and is sometimes desirable if done right. Increase your ISO and shutter speed to find the right balance of stopping motion on your main subject, If that happens and hands etc. blur a little thats fine! In aviation photography you don't want to freeze the propeller....

A faster shutter speed is most important so use shutter priority, set your shutter speed to at least 1/250, and a high enough ISO to give you an aperture of F11 or F16. And be sure to prioritize your focus on the face using the smallest focusing field setting. If your camera can also do Continuous focus mode, use that so it will follow focus with the subject.
