I don't think the size of the cards is as critical as the speed. I shoot Nikon D800, D7100 and D7000, each with a different lens set up to avoid changing lenses and introducing dust into the vacation equation. All photos in RAW. I try not to put more than 100 shots on a card for two reasons, 1 I don't want all my eggs in one basket as they say, but secondly, It takes a lot longer to download a mega card onto my computer as opposed to downloading my shots in batches to work on

No way would I go with only 16gb. I would take 4 64's at the very least. You are talking maybe $100-200 for a trip you are spending thousands for. Its not about one going bad. I've never had one go bad. But I have run out at a critical time. For a once in a lifetime trip you don't want to do that.
You do need to see what your camera will support but I would certainly buy more than less.

Just me, but I always take one 32 gig card for each day and one extra. I like to have them separated by days and a spare. That way if one card has a problem, I still have the others.

Like I said, that is just me.

I agree. A 32 gb card for each day and labeled day 1, day2 etc. to keep it simple. Throw in 4 16’s for good luck. Have an awesome trip!!

My wife and I will be traveling to Italy soon and for convenience sake I'll be bringing my SX50. It'll only be for 11 days, but I'm sure I'll be taking plenty of photos and maybe a few movies. Around here I use a Sandisk Ultra 16 GB card. So my question to you seasoned travelers is this...what size card should I use ? 128 Pro or is that overkill ?

I use 32GB and 64GB cards. I wouldn't want to rely on one card to hold that much. Of course, in ten years, 128GB might be my "small" card.

I normally shoot with 32gb cards. When traveling I'll use one fresh card for each day. This way if one or more of the cards go bad I have not lost my vacation memories. The size of the card that you use is up to you. I have never filled up a 32gb card to this day.
