Love the lighting. I miss canning - was labor intensive, but so satisfying. Don't mean to sound stupid, but what is Hatch Chili - I have never heard of it.

Glad to clarify..... You may know them as New Mexico chili peppers. They are very popular in the Dallas area. When they are in season you can buy entire cases of them in the local grocery stores. My wife roasts and peels them and turns them into a sweet - spicy jam.

What is Hatch chili? Please pardon the culinary ignorance of a New Englander, but I've never heard of it before.

Mild to medium peppers from New Mexico. Unique flavor profile.... Mostly used roasted and peeled. They can be used on almost anything you want to add a bit of heat to. Great on burgers.
