Does anyone know of a book that gives you a photography lesson along with an actual assignment on how to use what you learned in that specific lesson so you try out the settings that are recommended etc. I have lots of books with pretty pictures and what the photographer set his camera settings at, but I want an actual assignment to work on. Any suggestions are welcome.
I don't know of a book on the subject that you can buy but you might check with a photography school and see how much they charge for their courses. When I took the New York School of Photography many years ago, each lesson was a stand alone assignment. Might be worth your while.

Take a look at Michael Freeman's "Fundamentals of Photography School". It also comes in a Kindle format. It has assignments at the end of each subject, and displays work done by actual photography school students.
I just found this section of UHH and so pleased with the suggestions from you all. I completed the Proud Photography Course a few year ago and found it enlightening in several respects. It had a lot that I already knew but it helped round out those areas well and I do feel I advanced some in my photography.
I plan to check out the other suggestions, too. Thank you for the tips.
