I have been "experimenting" with altering the ISO using the meter reading on my camera to estimate the needed change. That seems to work very nicely. Unfortunately it really takes too long on my Nikon, since it literally means taking the camera away from my eye. I did experience the fact that underexposed still provides enough information to allow me to adjust the brightness in post processing. I have been using Photo Explosion which allows editing of either/both RAW and jpg files. I even notice that Microsoft Photo allows a little editing capacity and will allow this form of editing and you produce a nice result.
