I would start with what you need (and don't need) for attire. Americans take too much luggage. I could fit what I would need in a Timbuk2 biking back pack. 3-4 changes of light weight underwear and socks, one pair of canvas shoes, 2 pairs light weight trousers, 1 pair walking shorts, small toiletry bag, water bottle, light water proof jacket, hat for rain/ sun protection. For photographic gear a Fuji xt-2 with an 18-55 lens ( or comparable) 4/3. Round it out with memory cards, charger, extra battery. The fabric of today's trave/camping gear makes it easy to sink wash the essentials and they'll dry overnight. Traverlers rarely regret taking too little; they often regret taking too much. Why tote around 20#s of dirty laundry? Anything else you need can be purchased.
I just returned from three weeks in France, Germany and Switzerland. I took my trusty Nikon P510 224 to 1000mm lens not as bulky as as the full size. Sorry, there is no raw setting. Have a great Trip. There is always the P-900 but it is a lot larger than the P-510..

You are either going on vacation or going to take pictures. If going on vacation, then get a good P&S camera. I prefer one that shoots RAW, because even with a P&S I like the results I get from post processing.
On the other hand, I am always going places to take pictures. So I use micro four thirds system, and take an ultra wide angle zoom, fast wide angle zoom, moderate telephoto zoom, and two fast primes (18mm and 45mm). And I take a carbon fiber travel tripod (Sirui T-025X) for night and pano shots.
It's a matter of priority. If I only had a DSLR, I would at least take it, one moderate zoom lens, and one fast prime. And a P&S for backup.
For a photographer, that's about the silliest question I've ever heard. It's obvious your not a photographer, so why ask the question??? Just go have fun....
